Ingredients

  • 1 pound rhubarb, chopped
  • 1 1/4 cups granulated sugar
  • 1/4 cup water
  • 1 1/2 fl oz gin
  • 1 1/2 fl oz rhubarb syrup
  • 1 fl oz freshly strained lemon juice
  • 1 fl oz aquafaba or 1 egg white
  • 2 fl oz plain or citrus seltzer

Instructions

  1. In a heavy-bottomed saucepan, combine rhubarb, sugar, and water.
  2. Heat over medium-low heat until the sugar dissolves and the liquid simmers.
  3. Cook for 10-15 minutes, stirring occasionally, until the rhubarb breaks down into a jammy texture.
  4. Strain the mixture through a fine-mesh strainer to obtain rhubarb syrup.
  5. Cool the rhubarb syrup to room temperature.
  6. In a cocktail shaker, combine gin, rhubarb syrup, lemon juice, and aquafaba or egg white.
  7. Shake vigorously without ice to froth the aquafaba or egg white.
  8. Add ice to the shaker and shake for 1 minute.
  9. Strain into a Collins or highball glass.
  10. Top with seltzer and garnish with a lemon wedge.
