Ingredients
- 1 pound rhubarb, chopped
- 1 1/4 cups granulated sugar
- 1/4 cup water
- 1 1/2 fl oz gin
- 1 1/2 fl oz rhubarb syrup
- 1 fl oz freshly strained lemon juice
- 1 fl oz aquafaba or 1 egg white
- 2 fl oz plain or citrus seltzer
Instructions
- In a heavy-bottomed saucepan, combine rhubarb, sugar, and water.
- Heat over medium-low heat until the sugar dissolves and the liquid simmers.
- Cook for 10-15 minutes, stirring occasionally, until the rhubarb breaks down into a jammy texture.
- Strain the mixture through a fine-mesh strainer to obtain rhubarb syrup.
- Cool the rhubarb syrup to room temperature.
- In a cocktail shaker, combine gin, rhubarb syrup, lemon juice, and aquafaba or egg white.
- Shake vigorously without ice to froth the aquafaba or egg white.
- Add ice to the shaker and shake for 1 minute.
- Strain into a Collins or highball glass.
- Top with seltzer and garnish with a lemon wedge.
