Ingredients

  • 1 part Mezcal
  • 1 part fresh lime juice
  • 1 part rhubarb syrup
  • 1 large egg white

Instructions

  1. To make the rhubarb syrup, combine chopped rhubarb, sugar, and water in a saucepan and bring to a boil.
  2. Simmer until the rhubarb is soft and falling apart, then strain the syrup and let it cool.
  3. In a cocktail shaker, combine the Mezcal, fresh lime juice, rhubarb syrup, and egg white with ice.
  4. Shake vigorously until the outside of the shaker becomes frosty.
  5. Strain into a chilled glass and serve.
