Ingredients
- 1 cup chopped rhubarb
- 1 cup sugar
- 1 part Mezcal
- 1 part fresh lime juice
- 1 part rhubarb syrup
- 1 large egg white
Instructions
- To prepare the syrup, combine rhubarb, sugar, and water in a saucepan. Boil and simmer until the rhubarb is soft and falling apart, then strain and let it cool.
- In a cocktail shaker with ice, combine Mezcal, fresh lime juice, rhubarb syrup, and egg white.
