Ingredients

  • 1 cup chopped rhubarb
  • 1 cup sugar
  • 1 part Mezcal
  • 1 part fresh lime juice
  • 1 part rhubarb syrup
  • 1 large egg white

Instructions

  1. To prepare the syrup, combine rhubarb, sugar, and water in a saucepan. Boil and simmer until the rhubarb is soft and falling apart, then strain and let it cool.
  2. In a cocktail shaker with ice, combine Mezcal, fresh lime juice, rhubarb syrup, and egg white.
  3. Shake vigorously until the outside of the shaker becomes frosty.
  4. Strain the mixture into a chilled glass and serve.
