Ingredients

  • 1 pound rhubarb, chopped into 1- to 2-inch slices
  • 1 1/4 cups granulated sugar
  • 1/4 cup water
  • 1 1/2 fluid ounces gin
  • 1 1/2 fluid ounces rhubarb syrup
  • 1 fluid ounce freshly strained lemon juice
  • 1 fluid ounce aquafaba or 1 egg white
  • 2 fluid ounces plain or citrus seltzer

Instructions

  1. In a heavy-bottomed saucepan, combine rhubarb, sugar, and 1/4 cup water.
  2. Heat over medium-low heat until the sugar dissolves and the mixture simmers.
  3. Cook for 10-15 minutes until the rhubarb is completely cooked down.
  4. Strain the mixture through a fine-mesh strainer to extract the rhubarb syrup.
  5. Cool the rhubarb syrup to room temperature.
  6. In a cocktail shaker, combine gin, rhubarb syrup, lemon juice, and aquafaba or egg white.
  7. Shake vigorously without ice for 30 seconds, then add ice and shake again for 1 minute.
  8. Strain the mixture into a Collins or highball glass.
  9. Top with seltzer and garnish with a lemon wedge or twist.
