Ingredients
- 1 pound rhubarb, chopped into 1- to 2-inch slices
- 1 1/4 cups granulated sugar
- 1/4 cup water
- 1 1/2 fluid ounces gin
- 1 1/2 fluid ounces rhubarb syrup
- 1 fluid ounce freshly strained lemon juice
- 1 fluid ounce aquafaba or 1 egg white
- 2 fluid ounces plain or citrus seltzer
Instructions
- In a heavy-bottomed saucepan, combine rhubarb, sugar, and 1/4 cup water.
- Heat over medium-low heat until the sugar dissolves and the mixture simmers.
- Cook for 10-15 minutes until the rhubarb is completely cooked down.
- Strain the mixture through a fine-mesh strainer to extract the rhubarb syrup.
- Cool the rhubarb syrup to room temperature.
- In a cocktail shaker, combine gin, rhubarb syrup, lemon juice, and aquafaba or egg white.
- Shake vigorously without ice for 30 seconds, then add ice and shake again for 1 minute.
- Strain the mixture into a Collins or highball glass.
- Top with seltzer and garnish with a lemon wedge or twist.
