Ingredients
- 2 stalks rhubarb (chopped)
- 1/4 cup honey
- 1/4 cup water
- 3 ounces pisco
- 1 ounce rhubarb honey simple syrup
- 1 ounce lime juice
- 1 egg white
- 2-3 dashes bitters
- 1 piece honeycomb (for garnish (optional))
- 1 strip rhubarb (thinly sliced, for garnish (optional))
Instructions
- In a small saucepan, combine chopped rhubarb, honey, and water, and simmer over medium heat until rhubarb is soft, about 5-6 minutes.
- Remove from heat and let it cool completely. Strain out the rhubarb pieces and discard.
- In a cocktail shaker, mix pisco, lime juice, rhubarb honey simple syrup, and egg white.
- Add ice to fill the shaker and shake vigorously. Alternatively, use a blender if a shaker is not available.
