Ingredients

  • 2 stalks rhubarb (chopped)
  • 1/4 cup honey
  • 1/4 cup water
  • 3 ounces pisco
  • 1 ounce rhubarb honey simple syrup
  • 1 ounce lime juice
  • 1 egg white
  • 2-3 dashes bitters
  • 1 piece honeycomb (for garnish (optional))
  • 1 strip rhubarb (thinly sliced, for garnish (optional))

Instructions

  1. In a small saucepan, combine chopped rhubarb, honey, and water, and simmer over medium heat until rhubarb is soft, about 5-6 minutes.
  2. Remove from heat and let it cool completely. Strain out the rhubarb pieces and discard.
  3. In a cocktail shaker, mix pisco, lime juice, rhubarb honey simple syrup, and egg white.
  4. Add ice to fill the shaker and shake vigorously. Alternatively, use a blender if a shaker is not available.
