Regal Earl Grey Gin Punch

A regal cocktail with gin, Earl Grey syrup, elderflower, and nectarine that's perfect for celebrating the Queen's Platinum Jubilee.

Ingredients

  • 3/4 cup caster sugar
  • 1 1/4 cups water
  • 4 Earl Grey tea bags
  • 1 2/3 cups gin
  • 2 1/2 tbsp elderflower cordial
  • 4 cups soda water
  • Juice of 3 lemons
  • 1-2 tsp Angostura bitters
  • 1 lemon, cut into wedges
  • 4 nectarines, cored and sliced
  • Edible flowers (to serve)

Instructions

  1. In a saucepan, heat the sugar and 1 1/4 cups water, stirring until the sugar dissolves.
  2. Bring to a boil, remove from heat, add the Earl Grey tea bags, and steep for 30 minutes.
  3. Squeeze the tea bags and discard them.
  4. Pour the cooled syrup into a bowl, and stir in the gin, elderflower cordial, soda water, lemon juice, and Angostura bitters to taste.
  5. Stir in the lemon wedges, sliced nectarines, and lots of ice.
  6. Adjust to taste and garnish with edible flowers before serving.
