Regal Earl Grey Gin Punch
A regal cocktail with gin, Earl Grey syrup, elderflower, and nectarine that's perfect for celebrating the Queen's Platinum Jubilee.

Ingredients
- 3/4 cup caster sugar
- 1 1/4 cups water
- 4 Earl Grey tea bags
- 1 2/3 cups gin
- 2 1/2 tbsp elderflower cordial
- 4 cups soda water
- Juice of 3 lemons
- 1-2 tsp Angostura bitters
- 1 lemon, cut into wedges
- 4 nectarines, cored and sliced
- Edible flowers (to serve)
Instructions
- In a saucepan, heat the sugar and 1 1/4 cups water, stirring until the sugar dissolves.
- Bring to a boil, remove from heat, add the Earl Grey tea bags, and steep for 30 minutes.
- Squeeze the tea bags and discard them.
- Pour the cooled syrup into a bowl, and stir in the gin, elderflower cordial, soda water, lemon juice, and Angostura bitters to taste.
- Stir in the lemon wedges, sliced nectarines, and lots of ice.
- Adjust to taste and garnish with edible flowers before serving.
