Ingredients

  • 3 oz sparkling water
  • 1 egg white
  • 1 1/2 oz. gin
  • 3/4 oz lemon juice (approximately 1/4 of a lemon)
  • 3/4 oz raspberry syrup (recipe below)
  • 3 drops rosewater
  • 1 rose petal for garnish
  • Ice
  • FOR THE RASPBERRY SYRUP
  • 1 cup raspberries
  • 1/2 cup water
  • 1/2 cup sugar

Instructions

  1. In a saucepan, combine the water and sugar over medium heat until the sugar dissolves. Add the raspberries and bring to a boil. Remove from heat and let the mixture cool completely. Strain the syrup through a fine mesh sieve, pressing the raspberries with the back of a spoon to extract all the juice.
  2. Pour the sparkling water into a highball glass filled with ice.
  3. In a cocktail shaker, vigorously shake the egg white for 10 seconds or until it becomes foamy.
  4. Add the gin, lemon juice, raspberry syrup, and rosewater to the shaker, then shake vigorously for 30 seconds.
  5. Pour the mixture into the highball glass and garnish with a delicate rose petal.
