Raspberry Rose Fizz Delight

Ingredients
- 3 oz sparkling water
- 1 egg white
- 1 1/2 oz. gin
- 3/4 oz lemon juice (approximately 1/4 of a lemon)
- 3/4 oz raspberry syrup (recipe below)
- 3 drops rosewater
- 1 rose petal for garnish
- Ice
- FOR THE RASPBERRY SYRUP
- 1 cup raspberries
- 1/2 cup water
- 1/2 cup sugar
Instructions
- In a saucepan, combine the water and sugar over medium heat until the sugar dissolves. Add the raspberries and bring to a boil. Remove from heat and let the mixture cool completely. Strain the syrup through a fine mesh sieve, pressing the raspberries with the back of a spoon to extract all the juice.
- Pour the sparkling water into a highball glass filled with ice.
- In a cocktail shaker, vigorously shake the egg white for 10 seconds or until it becomes foamy.
- Add the gin, lemon juice, raspberry syrup, and rosewater to the shaker, then shake vigorously for 30 seconds.
- Pour the mixture into the highball glass and garnish with a delicate rose petal.
