Raspberry Rhubarb Bliss Mojito
A refreshing and vibrant twist on the classic mojito, featuring the delightful combination of fresh rhubarb, juicy raspberries, and an invigorating hint of mint.
Ingredients
- 1 cup fresh diced rhubarb
- 1 cup fresh raspberries
- 1/2 cup white sugar
- 1/2 cup water
- 6-8 sprigs fresh mint leaves
- 1/4 cup raspberry rhubarb simple syrup
- 3 ounces light rum
- 3 tablespoons lime juice
- Club soda
- Crushed ice
Instructions
- In a small pot, combine the sugar and water and bring to a boil.
- Add the diced rhubarb and raspberries, then reduce heat and simmer, stirring frequently, for 5 minutes.
- Remove from heat and let the mixture steep for about 5 minutes.
- Strain the syrup to remove all the solids, then transfer it into a bowl and chill until completely cooled.
- In a cocktail shaker, muddle together the raspberry rhubarb simple syrup, mint, and lime juice.
- Pour in the rum and muddle to combine.
- Pour the rum mixture into glasses over crushed ice.
- Optionally, remove the muddled mint leaves and add fresh ones for garnish.
