Raspberry Pomegranate Pear Sparkler

Ingredients

  • 1 ripe pear (peeled and frozen)
  • 1/2 cup fresh raspberries
  • Pomegranate Italian soda (or sweetened pomegranate juice)
  • Sparkling wine or ginger ale (chilled)
  • Lemon juice

Instructions

  1. Peel the ripe pear, cut into quarters, and remove the stems and seeds.
  2. Toss the cut pears in lemon juice and water to prevent browning, then place in a sealed bag or airtight container and freeze for an hour or two.
  3. Prepare the raspberry coulis or puree by blending fresh raspberries with a dash of lemon juice and a teaspoon of sugar, if desired. Strain the mixture to remove seeds.
  4. Once the pears are frozen, puree them in a blender with a teaspoon of sugar, without straining.
  5. In a large cocktail glass, add a couple of teaspoons of raspberry coulis, a scoop of the frozen pear puree, a few ounces of pomegranate Italian soda, and top with sparkling wine or ginger ale for an alcohol-free version.
  6. Garnish with fresh raspberries and a sprig of mint, if desired.
