Ingredients
- 2 oz. Gin
- 0.80 oz. Lemon juice
- 0.80 oz. Sugar syrup
- 0.50 oz. Egg white
- 3 Raspberries
Instructions
- Skewer 3 raspberries onto a toothpick and prepare the lemon for squeezing.
- Fill a coupe glass with ice.
- In a shaker, combine the gin, lemon juice, sugar syrup, egg white, and raspberries (without ice).
- Shake the cocktail vigorously for 10 seconds to emulsify the ingredients.
- Carefully open the shaker and fill it with cubed ice, then close it and shake again for 7 seconds.
- Empty the ice from the coupe glass back into the ice bucket.
- Remove the small top from the shaker and double strain the mix into the chilled glass.
- Garnish by placing the raspberry stick on top of the foamy cocktail.
