Ingredients

  • 2 oz. Gin
  • 0.80 oz. Lemon juice
  • 0.80 oz. Sugar syrup
  • 0.50 oz. Egg white
  • 3 Raspberries

Instructions

  1. Skewer 3 raspberries onto a toothpick and prepare the lemon for squeezing.
  2. Fill a coupe glass with ice.
  3. In a shaker, combine the gin, lemon juice, sugar syrup, egg white, and raspberries (without ice).
  4. Shake the cocktail vigorously for 10 seconds to emulsify the ingredients.
  5. Carefully open the shaker and fill it with cubed ice, then close it and shake again for 7 seconds.
  6. Empty the ice from the coupe glass back into the ice bucket.
  7. Remove the small top from the shaker and double strain the mix into the chilled glass.
  8. Garnish by placing the raspberry stick on top of the foamy cocktail.
