Ingredients

  • 2/3 cup raspberries
  • 3 slices of lemon (optional)
  • 1/2 vanilla bean (split, seeds scraped, pod reserved) or 1/4 teaspoon pure vanilla extract
  • 1 tablespoon sugar
  • 1 cup seltzer
  • Lemon wedge, for serving
  • Ice

Instructions

  1. In a heatproof bowl over a pan of simmering water, combine raspberries, sliced lemon (if using), vanilla bean, and sugar.
  2. Cook and stir until raspberries release most of their juices, about 12 minutes.
  3. Strain the mixture through a fine sieve, pressing gently with the back of a spoon to extract the syrup; discard the solids.
  4. Let the syrup cool.
  5. Pour the cooled syrup into a glass filled with ice.
  6. Top with seltzer and garnish with a lemon wedge.
