Ingredients
- 2/3 cup raspberries
- 3 slices of lemon (optional)
- 1/2 vanilla bean (split, seeds scraped, pod reserved) or 1/4 teaspoon pure vanilla extract
- 1 tablespoon sugar
- 1 cup seltzer
- Lemon wedge, for serving
- Ice
Instructions
- In a heatproof bowl over a pan of simmering water, combine raspberries, sliced lemon (if using), vanilla bean, and sugar.
- Cook and stir until raspberries release most of their juices, about 12 minutes.
- Strain the mixture through a fine sieve, pressing gently with the back of a spoon to extract the syrup; discard the solids.
- Let the syrup cool.
- Pour the cooled syrup into a glass filled with ice.
- Top with seltzer and garnish with a lemon wedge.
