Ingredients

  • 1/4 cup cold brew coffee
  • 1/4 cup whipped cream flavored vodka
  • 1/4 cup french vanilla coffee creamer
  • 2 tablespoons pumpkin pie spice flavor syrup
  • 1/4 cup water
  • 2 packets unflavored gelatin
  • Garnish: whipped cream, pumpkin pie spice, 3 green straws (cut into small pieces)

Instructions

  1. Place a rimmed tray or plate and 2 oz. sized jell-o shot cups nearby.
  2. In a small bowl, sprinkle unflavored gelatin over water and microwave until dissolved. Set aside to cool slightly.
  3. In a 2-cup spouted measuring cup, mix cold brew coffee, whipped cream flavored vodka, french vanilla coffee creamer, and pumpkin spice flavor syrup.
  4. Add the warm, dissolved gelatin to the coffee mixture and stir well.
  5. Slowly pour the pumpkin spice latte mixture into each jell-o shot cup, filling them almost to the top.
  6. Refrigerate for at least 8 hours or overnight to set.
  7. Garnish with whipped topping, a sprinkle of pumpkin pie spice, and a piece of green straw before serving.
