Ingredients
- 3 oz Mezcal tequila
- 1 lime, juiced
- Juice of half a lemon
- 4 tbsp Pomegranate simple syrup
- 1/4 cup sugar (for rimming glass)
- 1 cup sugar
- 1 cup water
- 3 tbsp pomegranate seeds
Instructions
- In a small saucepan, combine 1 cup sugar, 1 cup water, and 3 tbsp pomegranate seeds. Bring to a boil over high heat.
- Reduce the heat to low and simmer for about 30 minutes until slightly thickened, then allow it to cool for approximately 30 minutes. Strain the mixture into an airtight jar, discarding the pomegranate seeds (makes about 3/4 cup of simple syrup).
- In a shaker, combine 3 oz Mezcal tequila, the juice of 1 lime, the juice of half a lemon, and 4 tbsp of the pomegranate simple syrup. Shake well.
- Pour about 1/4 cup sugar onto a plate. Wet the edge of a rocks glass, mason jar, or margarita glass and coat the rim with sugar. Fill the glass with ice and pour the margarita over the ice.
- Garnish with sliced lime and pomegranate seeds, and enjoy!
