Pisco Passion
A delightful South American cocktail with a sweet-tart taste and a fluffy white top, the Pisco Passion is made with pisco, fresh lime juice, sugar, and egg white, garnished with aromatic bitters.
Ingredients
- 1/4 cup granulated or turbinado sugar
- 2 oz pisco
- 1 oz fresh lime juice
- 1 egg white
- 3/4 oz 2-to-1 simple syrup
- Ice
- 3 to 4 dashes Angostura bitters
Instructions
- Prepare the simple syrup by heating the sugar with 1/4 cup water in a small saucepan over low heat until the sugar dissolves, approximately 3 minutes. Refrigerate if not using immediately.
- In a cocktail shaker, combine the pisco, lime juice, egg white, and 3/4 ounce of simple syrup. Cover and shake vigorously for 10 seconds.
- Add ice to the shaker, cover it again, and shake vigorously until chilled, about 10 to 15 seconds more.
- Double-strain the mixture into a chilled coupe or Nick and Nora glass.
- Garnish the Pisco Passion with 3 to 4 dashes of Angostura bitters.
