Ingredients

  • 1.50 oz Mezcal
  • 2 oz Blanco Tequila
  • 1 oz Pineapple Juice
  • 0.38 oz Freshly squeezed Lemon Juice
  • 0.50 oz Orgeat Syrup
  • 0.75 oz Heavy Cream
  • 1 Sage leaf (For Garnish)

Instructions

  1. In a mixing glass, combine the Mezcal, Blanco Tequila, pineapple juice, freshly squeezed lemon juice, and orgeat syrup. Stir to mix.
  2. In a separate container, slowly pour the heavy cream. Then, gently pour the cocktail mixture into the cream without stirring. Cover and refrigerate for at least 30 minutes and up to 24 hours.
  3. Place a coffee filter in a fine mesh sieve over a bowl. Slowly pour the cocktail mixture through the filter, allowing it to filter through without holding the sieve.
  4. Serve the clarified cocktail over 1 large ice cube and garnish with a sage leaf. The clarified cocktail can be stored in the fridge for up to 2 weeks.
