Piña Clarita
The Clear as Piña cocktail is a clarified, colorless sour with mezcal, tequila, pineapple juice, lemon juice, orgeat syrup, and heavy cream, garnished with sage for a unique and delightful flavor experience.
Ingredients
- 1.50 oz Mezcal
- 2 oz Blanco Tequila
- 1 oz Pineapple Juice
- 0.38 oz Freshly squeezed Lemon Juice
- 0.50 oz Orgeat Syrup
- 0.75 oz Heavy Cream
- 1 Sage leaf (For Garnish)
Instructions
- In a mixing glass, combine all ingredients except the heavy cream and stir well.
- In a separate container, pour the heavy cream and slowly add the cocktail mixture without stirring.
- Cover the container and refrigerate for at least 30 minutes and up to 24 hours.
- Place a coffee filter in a fine mesh sieve over a new bowl and pour the cocktail mixture through the filter, allowing it to filter through without holding the vessel the entire time.
- Repeat the filtering process until complete.
- To serve, pour the clarified cocktail over 1 large ice cube and garnish with a sage leaf.
- The clarified cocktail can be stored in the fridge for up to 2 weeks.
