Ingredients

  • 1.50 oz Mezcal
  • 2 oz Blanco Tequila
  • 1 oz Pineapple Juice
  • 0.38 oz Freshly squeezed Lemon Juice
  • 0.50 oz Orgeat Syrup
  • 0.75 oz Heavy Cream
  • 1 Sage leaf (For Garnish)

Instructions

  1. In a mixing glass, combine all ingredients except the heavy cream and stir well.
  2. In a separate container, pour the heavy cream and slowly add the cocktail mixture without stirring.
  3. Cover the container and refrigerate for at least 30 minutes and up to 24 hours.
  4. Place a coffee filter in a fine mesh sieve over a new bowl and pour the cocktail mixture through the filter, allowing it to filter through without holding the vessel the entire time.
  5. Repeat the filtering process until complete.
  6. To serve, pour the clarified cocktail over 1 large ice cube and garnish with a sage leaf.
  7. The clarified cocktail can be stored in the fridge for up to 2 weeks.
