Ingredients
- 1 ripe Fuyu persimmon, cut into 1/2-inch cubes
- 1/2 cup water
- Freshly grated nutmeg
- 1 sprig rosemary
- 1 cup brown sugar
- 1 oz orange liqueur (e.g., Grand Marnier)
- 0.50 oz persimmon syrup
- 0.25 oz fresh lemon juice
- 4 oz dry Champagne
- Small sprig of rosemary, for garnish
- 1 cranberry, for garnish
Instructions
- In a medium saucepan over medium heat, caramelize the persimmon pieces for 5 to 10 minutes, stirring to prevent burning.
- Add water, rosemary, and freshly grated nutmeg to the saucepan, bring to a boil, then stir in the brown sugar until dissolved. Remove from heat, strain, and set aside to cool. (This makes about 1 cup of syrup, which can be stored in the refrigerator for up to 1 week.)
- In a cocktail shaker with ice, shake the orange liqueur, persimmon syrup, and lemon juice.
- Strain the mixture into a Champagne flute or saucer.
