Ingredients

  • 1 ripe Fuyu persimmon, cut into 1/2-inch cubes
  • 1/2 cup water
  • Freshly grated nutmeg
  • 1 sprig rosemary
  • 1 cup brown sugar
  • 1 oz orange liqueur (e.g., Grand Marnier)
  • 0.50 oz persimmon syrup
  • 0.25 oz fresh lemon juice
  • 4 oz dry Champagne
  • Small sprig of rosemary, for garnish
  • 1 cranberry, for garnish

Instructions

  1. In a medium saucepan over medium heat, caramelize the persimmon pieces for 5 to 10 minutes, stirring to prevent burning.
  2. Add water, rosemary, and freshly grated nutmeg to the saucepan, bring to a boil, then stir in the brown sugar until dissolved. Remove from heat, strain, and set aside to cool. (This makes about 1 cup of syrup, which can be stored in the refrigerator for up to 1 week.)
