Ingredients

  • 1/2 cup sliced peaches (about 1 medium peach)
  • 1/2 tablespoon fresh lemon juice
  • 1/2 tablespoon hot water
  • 1/2 teaspoon sugar
  • 1/2 (750ml) bottle prosecco sparkling wine (chilled)

Instructions

  1. In a small bowl, mix the hot water and sugar until the sugar is fully dissolved.
  2. Peel the fresh peach, remove the pit, and slice into large chunks.
  3. Blend the peaches, sugar water, and lemon juice until smooth.
  4. Strain the mixture over a bowl using a fine-mesh strainer to remove any solids.
  5. Refrigerate the puree until fully chilled.
  6. Stir the peach puree and add 2 tablespoons of the peach puree into a champagne glass.
  7. Top with chilled prosecco, gently stir, and serve immediately.
