Ingredients
- 1/2 cup sliced peaches (about 1 medium peach)
- 1/2 tablespoon fresh lemon juice
- 1/2 tablespoon hot water
- 1/2 teaspoon sugar
- 1/2 (750ml) bottle prosecco sparkling wine (chilled)
Instructions
- In a small bowl, mix the hot water and sugar until the sugar is fully dissolved.
- Peel the fresh peach, remove the pit, and slice into large chunks.
- Blend the peaches, sugar water, and lemon juice until smooth.
- Strain the mixture over a bowl using a fine-mesh strainer to remove any solids.
- Refrigerate the puree until fully chilled.
- Stir the peach puree and add 2 tablespoons of the peach puree into a champagne glass.
- Top with chilled prosecco, gently stir, and serve immediately.
