Ingredients

  • 1 large, ripe yellow peach, chilled
  • 1 teaspoon white sugar
  • 3 oz peach ale, chilled
  • 3 oz Prosecco, chilled
  • Fresh thyme, for garnish (optional)

Instructions

  1. Peel the ripe peach, cut it into pieces, and place them in a blender. Add the sugar and peach ale, then blend until smooth.
  2. Strain the peach puree through a sieve to remove any pulp, allowing the foam to settle. Give it a gentle stir if needed.
  3. Fill a chilled flute or tulip glass halfway with the peach puree.
  4. Slowly pour the Prosecco over the puree, pausing as needed to control the foam.
  5. Optionally, garnish with a sprig of fresh thyme and serve.
