Ingredients

  • 1 cup whole milk
  • 1/4 cup sugar
  • A pinch of baking soda
  • 1 cinnamon stick
  • 2 cloves
  • 3 egg yolks
  • 1/4 tsp vanilla extract
  • 2 tbsp rum or brandy

Instructions

  1. In a saucepan, combine the milk, sugar, baking soda, cinnamon stick, and cloves. Stir the mixture.
  2. Heat the mixture over medium-high heat until it comes to a boil.
  3. Reduce the heat to low and let the mixture simmer for 8 to 10 minutes to infuse the flavors of the spices into the milk.
  4. Remove the pan from the heat and allow it to cool while beating the egg yolks in a separate bowl.
  5. Gradually mix the beaten egg yolks into the cooled milk and return the saucepan to the stove.
  6. Heat the mixture over medium-high heat for 5 to 7 minutes, stirring frequently to prevent curdling.
  7. Remove the pan from the heat and strain the mixture through a sieve to remove the cloves and cinnamon stick.
  8. Stir in the rum or brandy.
  9. Refrigerate the Rompope for at least two hours before serving.
