Ingredients

  • 1/2 cup fresh or frozen blueberries
  • 2 tbsp water
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • 3/4 cup white grape juice or apple juice
  • 2 oz amber rum (40% alcohol)
  • Club soda
  • Prosecco (optional)
  • Lemon slice and frozen berries for garnish

Instructions

  1. In a saucepan, simmer the blueberries for 5 minutes to release their juice, adding a little water to expedite the process if desired.
  2. In a separate pot, simmer the sugar and water for 4-5 minutes to create a simple syrup.
  3. Strain the juice from the berries and add it to a covered plastic container.
  4. Puree the strained berries and add the puree to the container along with the simple syrup and other ingredients. Stir well and freeze for about 6 hours.
  5. Once ice sheets have formed, break them down into smaller crystals using an immersion blender or vigorous stirring.
  6. Return to the freezer and give it another stir after a few hours. Keep covered in the freezer until ready to serve.
  7. When serving, stir the slush well and spoon 4 ounces of the mixture into an 8 ounce glass. Add 2 or more ounces of club soda, stir and serve.
