Ingredients

  • 1 cup berry flavored sparkling water
  • 3 tablespoons neon pink simple syrup (made with pitaya)
  • 1 tablespoon half & half
  • Whipped cream (for garnish)
  • Maraschino cherry (for garnish)

Instructions

  1. Start by making the neon pink simple syrup by boiling equal parts water and sugar, then stirring in frozen pitaya and simmering for 10 minutes until the syrup thickens.
  2. Remove from heat, stir in vanilla extract, and strain the pitaya seeds out through a fine mesh sieve.
  3. Transfer the neon pink simple syrup into a heatproof container and refrigerate until cold.
  4. When ready to serve, fill a glass with 1 cup of berry sparkling water.
  5. Stir in the simple syrup and drizzle in a tablespoon of half & half.
  6. Garnish with whipped cream and a cherry.
