Ingredients

  • 1 cup berry flavored sparkling water
  • 3 tablespoons neon pink dragon fruit simple syrup
  • 1 tablespoon half & half
  • Whipped cream (for garnish)
  • Maraschino cherry (for garnish)

Instructions

  1. Make the neon pink simple syrup by boiling equal parts water and sugar, then adding frozen pitaya and simmering for 10 minutes.
  2. Once the syrup has thickened slightly, remove from heat, stir in vanilla extract, and strain out the pitaya seeds.
  3. Refrigerate the neon pink simple syrup until cold.
  4. When ready to serve, fill a glass with berry sparkling water and stir in the simple syrup.
  5. Drizzle in the half & half and garnish with whipped cream and a cherry.
