Ingredients
- 1 cup berry flavored sparkling water
- 3 tablespoons neon pink dragon fruit simple syrup
- 1 tablespoon half & half
- Whipped cream (for garnish)
- Maraschino cherry (for garnish)
Instructions
- Make the neon pink simple syrup by boiling equal parts water and sugar, then adding frozen pitaya and simmering for 10 minutes.
- Once the syrup has thickened slightly, remove from heat, stir in vanilla extract, and strain out the pitaya seeds.
- Refrigerate the neon pink simple syrup until cold.
- When ready to serve, fill a glass with berry sparkling water and stir in the simple syrup.
- Drizzle in the half & half and garnish with whipped cream and a cherry.
