Ingredients
- 1 tablespoon frozen peas, plus a few extra to garnish
- 2 tablespoons chopped cucumber, plus a few extra ribbons to garnish
- 5 mint leaves, plus 1 sprig to garnish
- 1 teaspoon runny honey or agave syrup
- 1 tablespoon lime juice
- 1.50 oz gin
- Tonic water to top up
Instructions
- In a cocktail shaker, combine the frozen peas, chopped cucumber, and mint leaves. Use a muddler or the end of a rolling pin to gently muddle the ingredients.
- Add the honey or agave syrup, lime juice, and gin to the shaker, stir well, and let it infuse for 5 minutes.
- Wrap a few ribbons of cucumber around the inside of a highball glass and fill it with ice cubes.
- Strain the gin mixture into the glass and top it up with tonic water.
- Garnish with a sprig of mint and a few extra peas.
