A refreshing and light cocktail that blends lemon verbena, pureéd cantaloupe, and Prosecco for a delightful summertime drink.
Ingredients
- 1 1/2 tablespoons sugar
- 1/2 tablespoon lemon verbena leaves
- 1/4 small ripe cantaloupe
- Prosecco or other sparkling wine (for serving)
Instructions
- In a small saucepan over medium-low heat, combine the sugar, lemon verbena, and 1 1/2 cups water. Stir to dissolve the sugar and bring to a simmer.
- Reduce the heat to low and gently simmer the mixture for 10 minutes. Let it cool, then strain the syrup into a pitcher and discard the solids.
- Halve the cantaloupe, remove the seeds, and scoop the flesh into a blender. Purée until smooth.
- Stir the pureéd cantaloupe into the syrup and chill the mixture until cold and foam has settled, which takes about 1-2 hours.
- To serve, fill a glass a third of the way full with the melon mixture. Top it off gently with Prosecco.
