Melon Breeze Spritz
A refreshing and light cocktail that combines the sweet notes of cantaloupe and the aromatic touch of lemon verbena with Prosecco.
Ingredients
- 3 tablespoons sugar
- 1 tablespoon lemon verbena leaves
- 1 small ripe cantaloupe
- Prosecco or other sparkling wine (for serving)
Instructions
- In a small saucepan over medium-low heat, stir together sugar, lemon verbena, and 1 1/2 cups water until the sugar is dissolved.
- Simmer the mixture gently for 10 minutes, then let it cool.
- Strain the syrup into a pitcher and discard the solids.
- Halve the cantaloupe, remove the seeds, and scoop out the flesh into a blender. Purée until smooth.
- Stir the puréed cantaloupe into the syrup and chill the mixture until cold and foam has settled, for about 1-2 hours.
- To serve, fill a glass a third of the way full with the melon mixture and top it off gently with Prosecco.
