Ingredients
- 2 oz white rum
- 1.50 oz hot water
- 1/4 tsp matcha powder
- 1.50 tbsp demerara sugar
- 1/2 lime, juiced
- 10 mint leaves
- Club soda to top
- Crushed ice
- Mint and lime wedges to garnish
Instructions
- Heat water until hot but not boiling to make tea. Add 1/4 tsp of matcha to water and whisk vigorously until fully dissolved. Set aside and allow it to cool.
- Add demerara sugar and mint leaves to a cocktail glass. Muddle the mint leaves with the sugar until fragrant.
- Squeeze the juice of half a lime into the glass and continue to muddle until the mint leaves are broken into smaller pieces.
- Once the matcha has cooled slightly, add the rum and matcha mixture to a cocktail shaker filled with ice. Shake for a slow count of 10.
- Add crushed ice to the prepared glass. Strain and pour the rum matcha mixture into the glass.
- Top with club soda, stir well, and garnish with mint leaves and lime wedges.
