Ingredients

  • 2 oz white rum
  • 1.50 oz hot water
  • 1/4 tsp matcha powder
  • 1.50 tbsp demerara sugar
  • 1/2 lime, juiced
  • 10 mint leaves
  • Club soda to top
  • Crushed ice
  • Mint and lime wedges to garnish

Instructions

  1. Heat water until hot but not boiling to make tea. Add 1/4 tsp of matcha to water and whisk vigorously until fully dissolved. Set aside and allow it to cool.
  2. Add demerara sugar and mint leaves to a cocktail glass. Muddle the mint leaves with the sugar until fragrant.
  3. Squeeze the juice of half a lime into the glass and continue to muddle until the mint leaves are broken into smaller pieces.
  4. Once the matcha has cooled slightly, add the rum and matcha mixture to a cocktail shaker filled with ice. Shake for a slow count of 10.
  5. Add crushed ice to the prepared glass. Strain and pour the rum matcha mixture into the glass.
  6. Top with club soda, stir well, and garnish with mint leaves and lime wedges.
