Ingredients

  • 1 small fennel bulb, chopped, fronds reserved
  • 1 teaspoon fennel seeds
  • 1/2 cup sugar
  • 2 tablespoons marmalade
  • 2 tablespoons liqueur (e.g. orange liqueur)
  • 2 1/2 tablespoons gin
  • Ice cubes
  • 2 1/2 tablespoons soda water
  • Extra marmalade, to serve

Instructions

  1. In a saucepan over medium heat, combine the chopped fennel, fennel seeds, sugar, and 1 cup of water. Simmer for 10 minutes until the sugar dissolves and the syrup thickens slightly. Allow the mixture to cool, then strain through a fine sieve into a jug. Discard the solids and refrigerate for 1 hour to chill.
  2. In a cocktail shaker, combine half of the chilled syrup, half of the marmalade, half of the liqueur, and half of the gin with a few ice cubes. Shake well and strain into a serving glass.
  3. Repeat the process with the remaining syrup, marmalade, liqueur, gin, and ice. Add an ice cube to each glass and top with soda water. Garnish with extra marmalade and reserved fennel fronds.
