Ingredients
- 1 3/4 cups whole milk
- Seeds from 1 vanilla pod
- 1/4 cup cacao nibs
- 1/2 cup granulated sugar
- 1/4 teaspoon sea salt
- 3 tablespoons coarse-ground coffee
- 1 3/4 cups Irish whiskey, such as Bushmills Black Bush
- 2/3 cup heavy cream
Instructions
- Sterilize a reusable glass bottle and cap by boiling it in hot water.
- In a small saucepan, gently simmer the whole milk, vanilla seeds, and cacao nibs for 30 minutes.
- Strain the mixture and return the liquid to the pan. Add sugar and salt, then gently simmer until reduced by half.
- Add the coffee to the milk mixture, let it rest for 5 minutes, then strain the liquid and let it cool completely.
- Stir the whiskey into the milk mixture. Using a blender, slowly pour in the cream while blitzing the mixture for 20 seconds.
- Pour the finished Irish cream into the sterilized bottle and seal it. Chill in the fridge until cold.
