Ingredients

  • 1 3/4 cups whole milk
  • Seeds from 1 vanilla pod
  • 1/4 cup cacao nibs
  • 1/2 cup granulated sugar
  • 1/4 teaspoon sea salt
  • 3 tablespoons coarse-ground coffee
  • 1 3/4 cups Irish whiskey, such as Bushmills Black Bush
  • 2/3 cup heavy cream

Instructions

  1. Sterilize a reusable glass bottle and cap by boiling it in hot water.
  2. In a small saucepan, gently simmer the whole milk, vanilla seeds, and cacao nibs for 30 minutes.
  3. Strain the mixture and return the liquid to the pan. Add sugar and salt, then gently simmer until reduced by half.
  4. Add the coffee to the milk mixture, let it rest for 5 minutes, then strain the liquid and let it cool completely.
  5. Stir the whiskey into the milk mixture. Using a blender, slowly pour in the cream while blitzing the mixture for 20 seconds.
  6. Pour the finished Irish cream into the sterilized bottle and seal it. Chill in the fridge until cold.
