Ingredients

  • 1 oz. fino sherry
  • 1 oz. brandy
  • 1 oz. dry white Bordeaux
  • 1/2 oz. fresh lemon juice
  • 1/2 oz. fresh orange juice
  • 1/2 oz. pineapple gomme syrup
  • 2 cucumber slices
  • 1 oz. dry sparkling wine, to top
  • 1 oz. chilled soda water, to top

Instructions

  1. In a shaker, combine fino sherry, brandy, dry white Bordeaux, fresh lemon juice, fresh orange juice, pineapple gomme syrup, and muddle the cucumber slices.
  2. Add ice to the shaker and shake to chill the mixture.
  3. Double strain the mixture into an ice-filled glass.
  4. Top with the chilled soda water and dry sparkling wine.
  5. Garnish as desired.
