Lex's Lavender Grey Gin Fizz
A delightful gin fizz with lavender-infused egg white, Edith Grey simple syrup, and a sparkling wine topper for a refreshing twist on a classic cocktail.
Ingredients
- 2 oz. gin
- 1/2 oz. Edith Grey simple syrup (recipe below)
- 3/4 oz. lemon juice
- 1 lavender-infused egg white
- Sparkling wine
- Agave syrup
- Edith Grey tea
- 1 part Edith Grey hot tea
- 1 part white sugar
- 1 egg
- Dried lavender buds
Instructions
- To prepare the lavender-infused egg white, place a whole egg (unbroken, in the shell) in a sealed container on a thick bed of lavender buds and refrigerate for two to three days in advance.
- Prepare the Edith Grey simple syrup by brewing the tea according to the package instructions. Remove the tea bags/strain the tea and combine it with equal parts sugar while hot. Stir until clear and let it cool.
- Once the egg and syrup are ready, combine all ingredients except the sparkling wine in a shaker.
- Dry shake the mixture, then add ice and continue shaking for at least thirty seconds.
- Strain the cocktail into a glass and top with sparkling wine. Garnish with Edith Grey tea on the condensation along the outside of the glass.
