Ingredients

  • 1/4 cup caster sugar
  • 4 kumquats
  • 2 Earl Grey tea bags
  • 1 tbsp honey or agave syrup
  • 1 lime
  • 3 sprigs of fresh mint

Instructions

  1. In a large saucepan, bring 1/2 cup of water and 1/2 cup of caster sugar to a boil.
  2. Add the kumquats and let the mixture simmer for about 15 minutes.
  3. Keep an eye on the pan and add extra hot water if needed.
  4. Allow the kumquats to cool in the syrup and then place them in the freezer.
  5. Prepare 2 cups of Earl Gray tea, not too strong, and add the remaining sugar and honey.
  6. Chill the tea in the refrigerator for 10 minutes.
  7. Slice the lime into wedges and add them to the cooled tea with the mint and the frozen kumquats.
  8. Place the mixture in the fridge for at least 1 hour to let the flavors develop.
