Ingredients
- 1/4 cup caster sugar
- 4 kumquats
- 2 Earl Grey tea bags
- 1 tbsp honey or agave syrup
- 1 lime
- 3 sprigs of fresh mint
Instructions
- In a large saucepan, bring 1/2 cup of water and 1/2 cup of caster sugar to a boil.
- Add the kumquats and let the mixture simmer for about 15 minutes.
- Keep an eye on the pan and add extra hot water if needed.
- Allow the kumquats to cool in the syrup and then place them in the freezer.
- Prepare 2 cups of Earl Gray tea, not too strong, and add the remaining sugar and honey.
- Chill the tea in the refrigerator for 10 minutes.
- Slice the lime into wedges and add them to the cooled tea with the mint and the frozen kumquats.
- Place the mixture in the fridge for at least 1 hour to let the flavors develop.
