Ingredients

  • 1 cup kimchi
  • 1 1/4 cups tomato juice
  • 1/4 cup Sriracha chile sauce
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons sherry vinegar
  • Salt
  • Freshly ground pepper
  • 2 ounces vodka
  • Ice
  • Mint sprig or shiso leaf, for garnish

Instructions

  1. Puree the kimchi with the tomato juice, Sriracha, Worcestershire sauce, and sherry vinegar.
  2. Set a fine-mesh strainer over a bowl and strain the kimchi puree, pressing gently on the solids to extract as much juice as possible.
  3. Discard the solids or reserve them for another use.
  4. Chill the kimchi-Mary mix thoroughly, then season with salt and pepper.
  5. Stir in the vodka.
  6. Serve the cocktail over ice, garnished with a mint sprig or shiso leaf.
