Ingredients

  • 1.50 large egg yolks
  • 2 tbsp Swerve confectioners'-style sweetener
  • 1/4 cup heavy whipping cream
  • 1/2 cup unsweetened almond milk
  • 1/8 tsp ground nutmeg
  • pinch of ground cinnamon
  • 1/8 tsp vanilla extract
  • 1 oz rum or bourbon (optional)

Instructions

  1. In a medium bowl, whisk together the egg yolks and Swerve until the mixture is light and airy.
  2. In a saucepan over medium-high heat, combine the cream, almond milk, nutmeg, and cinnamon. Stir occasionally until the mixture reaches a simmer, then reduce the heat to low.
  3. Gradually add about 1/4 cup of the hot milk mixture to the egg mixture, whisking as you pour. Repeat this process two more times.
  4. Once most of the hot milk has been added to the eggs, pour the egg mixture back into the saucepan on the stove.
  5. Whisk constantly for a few minutes until the mixture slightly thickens. It will continue to thicken as it cools.
  6. Remove from heat and stir in the vanilla and rum or bourbon, if using.
  7. Serve warm or chilled, and garnish with a sprinkle of nutmeg and/or a cinnamon stick.
