Ingredients
- 1 large Egg yolk
- 1 tablespoon Erythritol (or preferred sugar substitute)
- 3 tablespoons Heavy cream
- 3 tablespoons Almond milk (can also use coconut milk or an almond coconut blend for a unique flavor)
- 1/8 teaspoon Ground nutmeg
- Pinch of Salt
- 1/2 teaspoon Vanilla extract
- 1 tablespoon Dark Rum or Bourbon (optional)
- 1/4 teaspoon Ground cinnamon (for garnish)
Instructions
- In a small bowl, whisk together the egg yolk and sugar substitute until well-combined and the mixture turns a lighter yellow.
- Add the heavy cream, almond milk, nutmeg, and salt to a medium saucepan. Heat over medium heat, stirring often, until it just begins to simmer.
- Remove the almond milk mixture from the heat. Slowly drizzle the hot milk into the egg mixture, whisking continuously to temper the eggs.
- Pour the tempered eggs into the heated milk, stirring continuously.
- Set the stovetop to medium-low and place the pot back on the heat. Stir for 8-10 minutes, or until the mixture thickens. If available, use an instant read thermometer to check the temperature (160 degrees F).
- Remove the eggnog from the heat and stir in the vanilla and optional dark rum or bourbon.
- Pour the eggnog into a pitcher or a sealable container. Cover and refrigerate until completely cooled, approximately 1-2 hours.
- If the eggnog thickens too much, stir in 2-3 tablespoons of heavy cream or almond milk before serving to reach the desired consistency.
