Ingredients

  • 1/2 cup water
  • 1/2 cup sugar
  • 1/2 cup grated, peeled, and seeded English cucumber, divided
  • 1 1/3 cup honeydew melon, chopped
  • 1/3 cup fresh mint leaves
  • 2 2/3 tbsp white rum
  • 1/4 cup fresh lime juice
  • 1/3 cup club soda
  • ice

Instructions

  1. In a saucepan over medium-high heat, combine water, sugar, and ¼ cup of grated, peeled, and seeded English cucumber to make the simple syrup. Heat until the sugar dissolves.
  2. Remove the saucepan from the heat and stir the remaining ¼ cup of cucumber into the syrup. Allow the mixture to cool to room temperature, then strain and discard the solids.
  3. In a blender, puree the honeydew melon and strain the juice through a fine-mesh sieve. Reserve the juice and discard the solids.
  4. In a pitcher, muddle the fresh mint with the simple syrup until fragrant. Stir in the melon juice, white rum, and lime juice, then chill the mixture.
  5. Just before serving, stir in the club soda and serve the cocktail over ice.
