Honeydew Minty Cucumber Mojito
A delightful and invigorating cocktail with sweet honeydew melon, fresh mint, and a hint of cucumber, combined with white rum, lime juice, and fizzy club soda.
Ingredients
- 1/2 cup water
- 1/2 cup sugar
- 1/2 cup grated, peeled, and seeded English cucumber, divided
- 1 1/3 cup honeydew melon, chopped
- 1/3 cup fresh mint leaves
- 2 2/3 tbsp white rum
- 1/4 cup fresh lime juice
- 1/3 cup club soda
- ice
Instructions
- In a saucepan over medium-high heat, combine water, sugar, and ¼ cup of grated, peeled, and seeded English cucumber to make the simple syrup. Heat until the sugar dissolves.
- Remove the saucepan from the heat and stir the remaining ¼ cup of cucumber into the syrup. Allow the mixture to cool to room temperature, then strain and discard the solids.
- In a blender, puree the honeydew melon and strain the juice through a fine-mesh sieve. Reserve the juice and discard the solids.
- In a pitcher, muddle the fresh mint with the simple syrup until fragrant. Stir in the melon juice, white rum, and lime juice, then chill the mixture.
- Just before serving, stir in the club soda and serve the cocktail over ice.
