Ingredients

  • 1 large egg (separated)
  • 2 teaspoons superfine sugar (divided)
  • 1 oz heavy cream
  • 1/2 tsp pure almond extract
  • 1/2 tsp pure vanilla extract
  • 1 1/2 oz aged rum
  • Garnish: grated cinnamon
  • Garnish: grated nutmeg

Instructions

  1. Separate the egg into two bowls.
  2. Using a hand mixer, beat the egg yolk until creamy.
  3. Beat the egg white with 1 teaspoon of sugar until soft peaks form.
  4. Gently fold the egg white and yolk together using a spoon.
  5. In a separate bowl, beat the cream with the vanilla and almond extracts and the remaining 1 teaspoon of sugar until stiff peaks form.
  6. Add the rum to the cream mixture and stir gently.
  7. Slowly fold the cream into the egg mixture.
  8. Serve immediately in a punch or martini glass, over ice if desired.
  9. Garnish with grated nutmeg and cinnamon.
