Ingredients

  • 1 large egg yolk
  • 2 tablespoons granulated sugar
  • 2 tablespoons heavy whipping cream
  • 1/3 cup whole milk
  • 1/8 teaspoon ground nutmeg
  • Pinch of salt
  • 1/8 teaspoon vanilla extract
  • Ground cinnamon (for topping)
  • Alcohol (optional, see note)

Instructions

  1. In a medium bowl, whisk together the egg yolk and sugar until light and creamy.
  2. In a saucepan over medium-high heat, combine the cream, milk, nutmeg, and salt. Stir occasionally until the mixture reaches a bare simmer.
  3. Gradually add a large spoonful of the hot milk to the egg mixture, whisking vigorously to temper the eggs. Repeat this step until most of the hot milk has been incorporated into the eggs.
  4. Pour the egg and milk mixture back into the saucepan on the stove. Whisk constantly for a few minutes until the mixture slightly thickens or reaches about 160 degrees F on a thermometer. It will continue to thicken as it cools.
  5. Remove from heat and stir in the vanilla and alcohol, if desired.
  6. Strain the eggnog through a fine mesh strainer into a pitcher, cover with plastic wrap, and refrigerate until chilled. For a smoother consistency, blend the mixture with 1 or 2 tablespoons of milk until smooth.
  7. Serve with a sprinkle of cinnamon or nutmeg, and top with fresh whipped cream, if desired.
  8. Store homemade eggnog in the fridge for up to one week.
