Ingredients

  • 2 tbsp boba tea tapioca pearls (black)
  • 1 tbsp sugar
  • 5 fresh mint leaves
  • 1 oz Green Chartreuse
  • 1 oz gin
  • 1 oz fresh lime juice
  • 1 oz simple syrup
  • 1/4 oz Aperol (or Campari)

Instructions

  1. Prepare the boba tapioca balls by boiling them in water with sugar until they float, then cooking for an additional 2-3 minutes until desired softness. Drain and rinse with cold water.
  2. Muddle 5 mint leaves in a cocktail shaker.
  3. Add Green Chartreuse, gin, lime juice, and simple syrup to the shaker.
  4. Fill the shaker with ice and shake vigorously for about 20 seconds.
  5. Pour the contents of the shaker into a tall cocktail glass, then add a couple spoonfuls of the cooked tapioca balls.
  6. Gently spoon Aperol over the top and serve immediately with a straw.
