Ingredients

  • 2 medium yellow peaches (about 6 ounces each), sliced into wedges
  • 1/4 cup packed brown sugar (about 55 grams)
  • 4 ounces lemon seltzer water
  • 6 large fresh mint leaves, plus more for garnish

Instructions

  1. Heat a large nonstick skillet over medium-high heat and sear the peach wedges until charred on both sides.
  2. Reserve some charred peaches for garnish and transfer the rest to a food processor.
  3. Add brown sugar to the charred peaches in the food processor and puree until smooth.
  4. Smack the mint leaves to release the oils and add them to a serving glass.
  5. Fill three-quarters of the glass with ice, add 3 ounces of the charred peach puree, and top off with lemon seltzer water.
  6. Stir well and garnish the glass with a mint sprig and a slice of charred peach.
