Ingredients
- 2 medium yellow peaches (about 6 ounces each), sliced into wedges
- 1/4 cup packed brown sugar (about 55 grams)
- 4 ounces lemon seltzer water
- 6 large fresh mint leaves, plus more for garnish
Instructions
- Heat a large nonstick skillet over medium-high heat and sear the peach wedges until charred on both sides.
- Reserve some charred peaches for garnish and transfer the rest to a food processor.
- Add brown sugar to the charred peaches in the food processor and puree until smooth.
- Smack the mint leaves to release the oils and add them to a serving glass.
- Fill three-quarters of the glass with ice, add 3 ounces of the charred peach puree, and top off with lemon seltzer water.
- Stir well and garnish the glass with a mint sprig and a slice of charred peach.
