Ingredients

  • 1 ripe peach (pitted and quartered)
  • 2-3 fresh basil leaves
  • 3/4 tablespoon honey
  • juice of 1/4 lemon (about 3/4 tablespoon)
  • 2 ounces lemon rum
  • 1/2 ounce lemon lime soda

Instructions

  1. Preheat a gas grill to high heat (450°F - 500°F).
  2. Cook the peach quarters covered over direct heat for 2-3 minutes per side until softened. Remove from the grill and cut into 1-inch pieces. Let them cool.
  3. In a pitcher, muddle the grilled peaches, basil, honey, and lemon juice to release the flavors and juices.
  4. Add the lemon rum and lemon lime soda, then stir to combine.
  5. To serve, pour the cocktail into a lowball glass filled partway with ice, either straining the cocktail using a Hawthorne strainer or allowing some of the muddled peaches to fall into the glass.
