Ingredients
- 1.50 tsp dried hibiscus petals
- 3/8 cup boiling water
- 2 tbsp fresh lime juice
- 2 tbsp ginger liqueur (such as Domaine de Canton)
- 2 tbsp ginger beer
- 1 sprig of fresh mint for garnish
- fresh ginger, peeled and thinly sliced
Instructions
- Steep hibiscus petals in boiling water for 5 minutes.
- Strain the mixture into a heatproof bowl set in a bowl of ice to speed cooling. Allow it to cool completely.
- Transfer the cooled hibiscus infusion to a small pitcher.
- Stir in the lime juice and ginger liqueur.
- Pour the mixture into an ice-filled Collins glass.
- Top it off with ginger beer.
- Garnish with a sprig of fresh mint and thinly sliced ginger.
