Ingredients
- 1 cup half-and-half
- 1 egg yolk
- 1 tablespoon Agave In The Raw
- 1 tablespoon molasses
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground cinnamon
- Pinch of fine sea salt
- 2 tablespoons dark rum
- 1/2 teaspoon vanilla extract
Instructions
- Heat the half-and-half in a saucepan until steaming.
- In a bowl, whisk together the egg yolk, agave, molasses, ginger, nutmeg, cinnamon, and salt.
- Pour half of the hot half-and-half into the yolk mixture, whisking constantly.
- Pour the yolk mixture into the remaining half-and-half and gently heat until it reaches 180 degrees F.
- Remove from heat, let it cool to room temperature, then whisk in the rum and vanilla.
- Refrigerate until chilled for at least 8 hours.
