Ingredients

  • 4 gingersnaps
  • 1 tablespoon honey
  • 1 1/2 ounces vanilla vodka
  • 1 ounce Irish cream liqueur (such as Baileys)
  • 2 tablespoons ginger syrup
  • 2 tablespoons half-and-half
  • Whipped cream
  • 0.50 cup water
  • 0.50 cup granulated sugar
  • 3 tablespoons chopped fresh ginger

Instructions

  1. For the ginger syrup, combine water, granulated sugar, and chopped fresh ginger in a small saucepan. Simmer until sugar is dissolved, then let it cool and strain into an airtight container.
  2. Place 3 gingersnaps in a plastic bag and crush them. Transfer to a plate.
  3. Dip the rim of a martini glass into honey, then into the crushed gingersnaps to coat lightly.
  4. In a cocktail shaker filled with ice, combine vanilla vodka, Irish cream liqueur, ginger syrup, and half-and-half. Shake well.
  5. Strain the mixture into the prepared martini glass and garnish with whipped cream and the remaining gingersnap. Serve immediately.
