Ginger Peach Bourbon Smash
A refreshing and seasonal cocktail featuring ripe peaches, zesty ginger, and smooth bourbon.
Ingredients
- 1 ripe peach (about 2 ounces)
- 1 tablespoon sugar
- 1 teaspoon finely grated peeled ginger
- 1 1/2 ounces bourbon
- 1/2 ounce fresh lemon juice
- Mint sprig and peach wedge for garnish
- Ice
Instructions
- Score an X in the bottom of the peach and blanch it in boiling water for about 30 seconds. Then, transfer it to a bowl of ice water to cool.
- Peel the peach, remove the pit, and roughly chop it. Blend the peach with water until smooth, then strain the mixture through a fine-mesh sieve to remove any solids.
- Combine sugar, ginger, and hot water in a jar, shake vigorously until the sugar is dissolved, then strain the syrup through a fine-mesh sieve and chill it.
- In a cocktail shaker, combine bourbon, peach purée, ginger syrup, and lemon juice. Add ice, shake vigorously for about 20 seconds, and strain into a rocks glass filled with ice.
- Garnish with a mint sprig and peach wedge.
