Ingredients

  • 1 1/2-inch piece fresh ginger, unpeeled and thinly sliced
  • 4 regular-size green tea bags
  • 2 oz. Pimm's No. 1
  • 1 Tbsp. honey
  • 1/2 oz. fresh lemon juice (from 1/2 lemon)
  • Lemon slice for garnish
  • 1/2 tsp. dry vermouth (optional)
  • Fresh mint for garnish
  • Ice

Instructions

  1. In a small saucepan, bring the sliced ginger and 1 1/2 cups of water to a boil.
  2. Remove from heat and add the green tea bags.
  3. Let the tea bags steep in the ginger-infused water for 20 minutes, and then strain the mixture into a pitcher to remove the solids.
  4. Add Pimm's No. 1, honey, fresh lemon juice, and, if desired, dry vermouth to the tea mixture and stir to dissolve the honey.
  5. Chill the mixture in the refrigerator, uncovered, for 2 hours.
  6. Serve the cocktail over ice, garnished with a slice of lemon and fresh mint.
