Ingredients
- 1 1/2-inch piece fresh ginger, unpeeled and thinly sliced
- 4 regular-size green tea bags
- 2 oz. Pimm's No. 1
- 1 Tbsp. honey
- 1/2 oz. fresh lemon juice (from 1/2 lemon)
- Lemon slice for garnish
- 1/2 tsp. dry vermouth (optional)
- Fresh mint for garnish
- Ice
Instructions
- In a small saucepan, bring the sliced ginger and 1 1/2 cups of water to a boil.
- Remove from heat and add the green tea bags.
- Let the tea bags steep in the ginger-infused water for 20 minutes, and then strain the mixture into a pitcher to remove the solids.
- Add Pimm's No. 1, honey, fresh lemon juice, and, if desired, dry vermouth to the tea mixture and stir to dissolve the honey.
- Chill the mixture in the refrigerator, uncovered, for 2 hours.
- Serve the cocktail over ice, garnished with a slice of lemon and fresh mint.
