Ingredients

  • 3 oz. white wine, such as Chardonnay
  • Juice of 1/2 large lemon
  • 1 1/2 tbsp sugar
  • 2 sprigs lemon thyme
  • Ice
  • 6 oz. tonic water

Instructions

  1. In a small saucepan, combine the white wine, lemon juice, 1/4 cup of water, and sugar. Bring to a boil.
  2. Add the zest of half a lemon to the mixture and let it simmer on medium-low heat for 5 minutes.
  3. Remove the saucepan from the heat and add one sprig of lemon thyme. Allow it to steep for 15 minutes.
  4. While the mixture is still warm, add another sprig of thyme and adjust the sweetness and tartness with additional sugar and lemon juice if desired.
  5. Strain the wine mixture into a 1 1/2-quart container and place it in a bowl filled with ice. Add water to the bowl to cover the ice and chill in the freezer until the mixture becomes slushy, about 8 hours.
  6. Divide the chilled mixture into glasses and top each with tonic water. Add ice if desired and garnish with a sprig of thyme.
