Ingredients
- 3 oz. white wine, such as Chardonnay
- Juice of 1/2 large lemon
- 1 1/2 tbsp sugar
- 2 sprigs lemon thyme
- Ice
- 6 oz. tonic water
Instructions
- In a small saucepan, combine the white wine, lemon juice, 1/4 cup of water, and sugar. Bring to a boil.
- Add the zest of half a lemon to the mixture and let it simmer on medium-low heat for 5 minutes.
- Remove the saucepan from the heat and add one sprig of lemon thyme. Allow it to steep for 15 minutes.
- While the mixture is still warm, add another sprig of thyme and adjust the sweetness and tartness with additional sugar and lemon juice if desired.
- Strain the wine mixture into a 1 1/2-quart container and place it in a bowl filled with ice. Add water to the bowl to cover the ice and chill in the freezer until the mixture becomes slushy, about 8 hours.
- Divide the chilled mixture into glasses and top each with tonic water. Add ice if desired and garnish with a sprig of thyme.
