Ingredients

  • 1 egg, separated
  • Pinch of salt
  • 1 1/3 tbsp sugar
  • 1 oz light rum
  • 1/4 tsp vanilla extract
  • 2 1/2 fl oz Canadian cream (35%)
  • 3 1/8 fl oz Canadian Milk
  • Freshly grated nutmeg

Instructions

  1. In a clean, dry bowl, beat the egg whites and salt until stiff peaks form; set aside.
  2. In another bowl, beat the egg yolks until light and gradually add the sugar, continuing to beat until thick and lemon-colored.
  3. Slowly stir in the rum and vanilla extract.
  4. In a separate bowl, whip the cream until softly stiff.
  5. Fold the whipped cream and then the egg whites into the yolk mixture.
  6. Gently stir in the milk.
  7. Serve well chilled, garnished with freshly grated nutmeg on top.
