Ingredients

  • 1 cup milk
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon vanilla extract
  • 1 1/2 large egg yolks
  • 2 tablespoons granulated sugar
  • 1/4 cup heavy cream
  • Whipped cream for garnish

Instructions

  1. In a small saucepan, combine milk, cinnamon, nutmeg, and vanilla and heat over low flame until it just begins to boil.
  2. In a medium bowl, whisk egg yolks and sugar until light and pale.
  3. Gradually add a small amount of the heated milk mixture to the eggs, whisking constantly to temper the eggs.
  4. Continue adding the heated milk gradually, whisking constantly until all the milk is incorporated and well combined with the egg mixture.
  5. Return the milk mixture to the saucepan and cook over medium heat until slightly thickened, ensuring it does not reach boiling point.
  6. Remove from heat and stir in the heavy cream.
  7. Chill for several hours.
  8. To serve, add a dollop of whipped cream and a sprinkle of ground cinnamon if desired.
