Ingredients
- 1 cup milk
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon vanilla extract
- 1 1/2 large egg yolks
- 2 tablespoons granulated sugar
- 1/4 cup heavy cream
- Whipped cream for garnish
Instructions
- In a small saucepan, combine milk, cinnamon, nutmeg, and vanilla and heat over low flame until it just begins to boil.
- In a medium bowl, whisk egg yolks and sugar until light and pale.
- Gradually add a small amount of the heated milk mixture to the eggs, whisking constantly to temper the eggs.
- Continue adding the heated milk gradually, whisking constantly until all the milk is incorporated and well combined with the egg mixture.
- Return the milk mixture to the saucepan and cook over medium heat until slightly thickened, ensuring it does not reach boiling point.
- Remove from heat and stir in the heavy cream.
- Chill for several hours.
- To serve, add a dollop of whipped cream and a sprinkle of ground cinnamon if desired.
