Foamy Aperol Fizz

Ingredients
- 1 1/2 oz. gin
- 1 frozen egg white cube (about 1 oz.)
- 3/4 oz. lemon juice
- 1/2 oz. Aperol
- 2 tsp. granulated sugar
- 3 dashes orange bitters
- Pinch of kosher salt
- 1 cup ice cubes
Instructions
- In a cocktail shaker, combine gin, egg white, lemon juice, Aperol, sugar, bitters, and salt. Shake vigorously until the egg white has melted and the drink is very foamy, for about 60 to 90 seconds.
- Add ice to the cocktail shaker and vigorously shake for 30 seconds.
- Strain the mixture into a chilled coupe or rocks glass and serve.
